1 kg quinoa
2 l vegetable stock 24 black olives roughly chopped |
6 tbspn fresh basil chopped
Salt & pepper |
Rinse quinoa several times and place in pan with vegetable stock
Bring to boil then simmer for about 15 mins until the water has been absorbed and the grains are light and fluffy.
Allow the quinoa to cool and mix in the olives, basil, salt and pepper
