12 tbspn olive oil

6 small onions sliced

6 garlic cloves finely chopped

3 green peppers sliced

2 tspn chilli powder

6 tspn paprika

6 tspn ground cumin

6 tspn ground coriander

1 kg Quorn mince

3 400 g cans chopped tomatoes

2 400 g cans red kidney beans drained

6 tbsp tomato puree

Salt and pepper


Heat oil in pan and steam- fry onions, garlic, chilli, paprika, cumin and coriander for about 10 ins until browning.

Add mince cook for 5-10 mins stirring so it doesn’t stick.

Add tomatoes and kidney beans. Mix well and simmer for 20 mins. Add peppers and simmer for 10 mins.

Add tomato puree and simmer for 2 mins stirring. Add more water if starting to stick.

Salt and pepper to taste
