125 g butter
125 g castor sugar 2 large eggs 2-3 large bananas lightly chopped 90 g chopped nuts (option) 50 g sultanas (option) |
125g sr flour
125g almonds ground ½ tsp salt ½ tsp mixed spice ¼ tsp sodium bicarb Handful flaked almonds |
Pre-heat oven to 165c
Cream sugar and butter till fluffy and add eggs – mix well
Add dry ingredients and mix
Fold in bananas
Tip into lined square tin and level out
Sprinkle with flaked almonds
Bake for 40mins and test with skewer then bake until skewer comes out clean
Place on wire tray to cool
